ALLIGATOR TAIL STEAKS
2 lbs. alligator tail steaks salt and pepper
flour
lemon juice butter
Cut alligator into four inch by two inch strips, salt and pepper, roll in flour. Fry quickly in hot butter. Sprinkle with lemon juice.
DEEP FRIED ALLIGATOR
2 lbs. alligator tail cubed (11/2 inch sq) oil for deep frying
2 eggs beaten
1 tsp. lemon juice
1 tsp. salt
1 cup flour
1/2 tsp. baking powder
Heat deep fryer or skillet with 2 inches oil, to about 375 degrees. Make a batter with 2 eggs beaten with 1 tsp. lemon juice and 1 tsp. salt Add 1 cup flour. More flour may be added to thicken if desired. Add 1/2 tsp. baking powder and beat until smooth. Dip gator bits into batter and fry until golden on all sides. Drain on paper towels. A good sweet and sour sauce will make these nuggets very tasty.
GRILLED ALLIGATOR TAIL
2 lbs. alligator tail
salt and pepper
lemon juice
butter
Salt and butter alligator, coat with lemon juice and butter. Wrap loosely, but seal as well as possible with heavy duty foil. Cook on barbecue grill, medium heat. Turn several times, cooking 20 to 30 minutes. Taste test for doneness. Don't overcook. Enjoy with lemon butter.
