4 large potatoes 1 tablespoon salt water to cover
Peel potatoes, cut in wedges. Place in cold salted water. Cover, cook until done, about 20 minutes. Drain, serve with brown gravy.
1/2 pound asparagus (cut In 1 inch lengths)
1 pint salted water
2 tablespoons flour 2 tablespoons butter
1 egg yolk
2 tablespoons cream
Clean, cut asparagus. Cook until tender in salted water. Make a white sauce by stirring flour into melted butter, adding dash of asparagus water until flour is completely dissolved. Add to soup with beaten egg and cream.
BROWN GRAVY (German)
3 tablespoons butter
4 tablespoons flour
1 chopped onion
2 cups water
1 bay leaf
2 tablespoons vinegar
salt, pepper and paprika to taste
Melt butter, add flour, slowly brown. Mix in onion. Add water gradually stirring constantly. Season and strain.
2 cups flour
3 teaspoons baking powder 1 teaspoon salt
1 tablespoon sugar
2 tablespoons shortening Add 1 beaten egg yolk mixed
with 2/3 cup milk.
Toss on floured board, knead 5 minutes. Shape in any way desired. Bake 15 minutes at 400 degrees. Brush with butter or milk when taken from oven.
1 can tomato soup 1 cup sauerkraut juice 6 crushed ice cubes
Mix soup and juice together. Pour over crushed ice in chilled glasses.
SOUR MILK BISCUITS Mix together:
2 cups flour
1/4 teaspoon salt
1/2 teaspoon soda
11/2 tablespoons shortening Add 1 cup sour milk or buttermilk Stir lightly. Drop into greased muffin tins. Bake in 400 degree oven for about 20 minutes.
(Eggless, butterless, milkless)
1 cup brown sugar
1/2 teaspoon baking powder
1 cup ground raisins
1 cup water
2 cups flour
1 teaspoon soda 1/2 teaspoon salt
1/2 teaspoon each of cinnamon, nutmeg, allspice
Boil sugar, raisins, in water 5 minutes. When cooked add soda dissolved in a little water. Add flour, baking powder and spices. Bake in loaf pan 40 minutes.
3 tablespoons shortening 2/3 cup flour
2 beaten eggs
3 1/2 cups flour
4 teaspoons baking powder
1 teaspoon salt
Cream shortening and sugar until light Add eggs. Stir in dry ingredients alternately with milk to make dough. Roll out 1/2 inch thick. Cut with doughnut cutter. Fry in hot fat, turning once as they brown.
2 large apples
2 tablespoons raisins 1 tablespoon sugar 1/2 teaspoon cinnamon 1 tablespoon bread crumbs
1 tablespoon butter
2 tablespoons grated nuts extra sugar
1/2 cup white wine
Select apples of same size. Pare and cut off tops. Scoop out cores carefully. Mix other items. Put into each apple with a small dab of butter and sugar.
Pour wine over apples and bake 30-40 minutes in 350 degree oven.
