CRUNCHY ONION CORN MUFFINS

2 eggs
1 tablespoon salt
2/3 cup oil
2 chopped green chilies (canned)
1 cup creamed corn
1 medium sweet vidalia onion finely chopped 8 ounces sour cream
2 (7 1/2 ounces) packages corn muffin mix 1-1/2 cups fried onion rings, crumbled
1 cup grated cheddar cheese

 

Mix all ingredients together, except onion rings. Grease muffin pans and fill to 2/3 level. Top with onion rings; bake for 15 minutes covered with foil. Uncover and bake 15 minutes more.
