 | VEGETABLE LATKES 2 medium zucchini (6 ounces) 4 medium carrots, thinly sliced 1 egg beater or other replacement (1/4 cup) 3 tablespoons matzo meal 1 tablespoon non-fat ricotta cheese 1/4 teaspoon salt 1/8 teaspoon pepper applesauce garnish
Place zucchini and carrots into steamer basket. Cover and steam over boiling water until very tender, about 8 minutes for zucchini, 15 minutes for carrot. Drain and mash with a potato masher. In a medium bowl, blend eggbeater with zucchini, carrot, ricotta, matzo meal salt and pepper. Using good nonstick pan, or a little spray, add a little veggie mixture, a rounded tablespoon at a time, spreading each patty to a 2-1/2 inch circle. Cook about 4 minutes, or until golden, turning once. To further crisp, broil 1 minute on each side after cooking.
